Segment events follow its Track, Identify, Page, Screen, Group and Alias spec, and most replacements accept the same calls. The slow part is the tracking plan and any Protocols rules, which do not export themselves. Write the plan down in the new tool first, then dual-send for a billing cycle and compare counts against the old workspace.

Rebuild what the add-ons did
If identity merges, computed traits or audiences ran on Unify or Engage, those have to be recreated in the target tool or in your warehouse. Inventory each audience and which destination reads it, because an audience that quietly feeds an ad platform is the one nobody notices missing.

Watch the write keys, the region and the double bill
Segment says that cancelling an annual plan does not stop overage charges while data still flows to its servers, so rotate or delete the write keys once cutover is done. Check which region the old workspace used, because EU and US endpoints are separate and the new vendor's hosting choice carries the same decision.
