Takeout is an archive, not a migration
Google's Takeout export is complete and free, which several rivals cannot match. A downloaded archive is still not a working mailbox. Use an import tool that connects to the old account directly, as Fastmail and Zoho Mail provide, and run it twice: once early, once at cutover.

Documents are the harder half
Mail moves; the documents people co-edit all day have no equal everywhere. Mail-only hosts such as Fastmail leave them needing another home, and complex spreadsheets do not survive the round trip into kSuite. Decide where documents will live before touching the mailboxes.

Re-establishing mail flow takes a weekend and careful DNS work. Publish SPF, DKIM and DMARC for the new host before changing the MX record, start DMARC at none, and keep the Google account receiving for thirty days afterwards to catch whatever arrives late.
